Dukkah & Quinoa Stuffed Sweet Potatoes  

A SIMPLE & YUMMY VEGAN MAIN MEAL OPTION

Ingredients

3 sweet potatoes

1/2 cup cooked quinoa

3 shallots

3 T spiced dukkah

1 t garlic powder

1 T olive oil

1/2 c chopped veggies of your choice

 

Method

Drizzel olive oil, salt & pepper over sweet potatoes on foil then wrap & place them in the oven for 30mins on 180 degrees.

Allow potatoes to cool. Cut in half & scrape out some of the potato.

In a mixing bowl combine potato & all other ingredients.

Place mixture back into the potato skins & top with extra shallots, dukkah & any herbs you may have.

Place in the oven for another 15-20mins to crisp.
