Lemony Walnut Pesto

Roasted Broccoli & Kale Zucchetti with Poms & Green Apple

Lemony Walnut Pesto

Ingredients

2 bunches of basil including stalks 

1 zest & juice of lemon 

2 garlic cloves 

1/2 c cup olive oil 

salt & pepper to taste 

3 kale stems, leaves only

1/2 c walnuts or other favourite nuts

Method

Blend all ingredients except nuts in a food processor until well combined. 

Add in walnuts & blend until combined leaving nuts slightly chunky. 

Mix into your favourite salads or enjoy as a dip or appetiser. 

 

Roast Broccoli & Kale Zucchetti with Poms & Apple

Ingredients

2 bunches broccoli chopped & roasted 

1 bunch of kale washed and massaged with EVO, salt & pepper

1 red onion thinly sliced 

5 zucchinis spiralled or julienned raw or slightly steamed 

Seeds of 1/2 pomegranate 

1 green apple julienned  

 

Method

Mix all ingredients together gently with lemony walnut pesto & top with pomegranates.

Enjoy.
